Here in Australia, the arrival of sweet, plump, ripe cherries at the local supermarket or green grocer is often a good indicator that summer has truly settled in.
A much-loved treat amongst all, cherries are great in the way they possess such genuinely vibrant flavours. Initially, a great cherry will always appear sweet to taste, followed by sour notes and a subtle tartness that really give this seasonal favourite its sophistication.
So with this in mind, we thought we’d provide you with a cherry liqueur recipe that’s not only easy to make at home, but can be enjoyed and used in any cocktail of your liking. Try it with some lemon juice cordial and soda water, or use it in a classic fizz or sour. Just think summer and experiment!
Pour the vodka, brandy and sugar into a jug and stir until the sugar is dissolved. Next, wash the cherries and then make a small incision in each fruit, leaving the pits in each. Place the cherries into large sealable jar and add the liquid.
For the next two to three months, store the mixture in a cool dark place and shake the contents each week to aid the infusion process. When you decide that the flavour is just right, strain the liquid into sterilised bottles and you’re ready to go.
