Cape Verde Cocktail
- 100ml white rum
- 1 lemon
- 2 teaspoons sugar
- Crushed ice
- Cut lemon into small wedges and, using a pestle and mortar, squash the lemon until most of the juice has come out. This can be done directly in a tumbler glass.
- Add half the lemon to each glass along with a teaspoon of sugar and then fill almost to the top of the glass with crushed ice.
- Add 50ml rum per glass.
- Give the cocktail a good mix until the sugar has dissolved and the ice has melted slightly.
- Top up with more crushed ice and serve
