Lychee Mojito


  • Tall glass


  • Schweppes Soda Water
  • Lychees
  • Ginger
  • Sugar
  • Crushed ice
  • White rum
  • Gin
  • Lime
  • Mint


  1. Add equal amounts of water and sugar to a saucepan and bring it to the boil
  2. Once it’s bubbling, add a handful of chopped ginger and take the pot off the heat, allowing it to cool
  3. Strain the ginger from the liquid, and, voila, you’ve made ginger syrup.

The rest of the Lychee Mojito process is easy:

  1. Take an ice-filled cocktail shaker and gently muddle some tinned lychees, lime and mint
  2. Throw in a shot of good-quality white rum and a dash of gin
  3. Pour over a small amount of lychee juice you’ve reserved from the can
  4. Finally, add some of your ginger syrup, and give the tin a shake
  5. Strain the contents of the shaker into a tall glass filled with crushed ice and top up with Schweppes Soda Water


Garnish with mint and a little lychee.
