Ingredients

  • 60ml Pisco
  • 25ml lemon Juice
  • 20ml sugar syrup (substitute a spoonful of sugar for a rustic version, alter to taste)
  • 1 egg white

Method

  1. Shake all the ingredients together without ice (this helps the egg white to emulsify and give you the requisite fluffy head)
  2. Add the ice and double strain the drink into a martini glass
  3. Finish with a few drops of Angostura bitters on the foam
